Nothing like the New Year to spread some good cheer and even better spirits. Here is a recipe for Pomegranate Infused Vodka. I love how deep and rich the color is. It is just key to remember that it is actually vodka with a bit of juice and not juice with a splash of vodka. In other words sip – don’t gulp! Straight on ice would be nice; or with a dash of lime and seltzer; or maybe even as a martini.
16 oz – Vodka
5 oz – Pomegranate Juice
1.5oz – Lingonberry Concentrate
2TB – Pomegranate Arils
2 tsp -Agave Nectar (to taste)
This recipe makes approx 20oz – for larger amounts simply multiply the recipe. I made a large jar of this infusion. My final batch included 2, 1.75ml bottles of vodka, one 60oz bottle of pomegranate juice, one 16oz bottle of lingonberry conconcentrate, one half cup of agave nectar and the arils of one large pomegranate.
Measure out the vodka and pour into a larger glass jar.
Next measure out the pomegranate juice and the lingonberry juice and pour both into the large container.
Once the flavor is to your liking add the pomegranate arils. An easy way to open a pomegranate is to cut it in half along the width, fill a large bowl with cold water and with the fruit underwater roll the arils out. This method prevents the juices from splattering. Once you are done drain out the water and scoop the fruit into the jar of vodka.
Although it is ready to drink at this point, allow the vodka mixture to sit for 2 to 3 weeks for best results. Strain out the fruit, then package into bottles.
